From the bespoke Manno Vineyard at Hillier in Mt Lofty Ranges, off vines over fifty years of age, planted to grey alluvial loams over limestone substrate. Treated to a traditional old world vinification of open top, whole bunch ferments and hand plunges, a good old fashioned basket press and twenty two months in a selection of seasoned French and American oaks. Its elegant, silky palate in support of clove and dark chocolate fruit flavours, it continues to build, dark and full of old vine power, its fine tannins drawing out the long satisifying finish.

Two Gawler high school mates mooted the idea of making Adelaide wine. Vineyards were surveyed, the major requirement being that old vines were essential. They fortuitously secured for themselves supply from some precious old sites which had survived the pullout schemes of the 1980s. Grapes are picked off old to very old vines, grown in auspicious sandy loams, nestled amongst the river red gums of Mt Lofty. Components are cannily assembled to achieve a unique construct of the established Cabernet Sauvignon style.

Think Adelaide Hills Grüner Veltliner and tasty Al fresco nibbles, what could be better? A distant relative of Traminer and Pinot Noir, Grüner Veltliner was recently redefined as seriously epicure when it triumphed over a field of prestigious Burgundies at a Grand Cru taste off. Indigenous to the temperate vales of Austria and the Danube, ever so popular around the cosmopolitan bars of Vienna, refreshingly crisp with zests of tropical fruit, its clean, revitalizing palate lingers with racy varietal notes of piquant white pepper and fragrant lime.

Leabrook is made to be marvellously eloquent with all the intense perfumery, crisp flavours and revitalizing acidity, which have so endeared adherents of the Adelaide Hills Sauvignon Blanc style. All the work in constructing such a wine happens in the vineyard, the challenge for the winemaker is to preserve the character and allow the charming fuit to speak for itself. A minimal handling of the precious grapes and long cool ferments, serve to retain all the lovely expressions which lie just below the skin.

Leabrook were born out of a love for the great Pinot Noir growths of la Bourgogne. Following a proverbial pilgimmage to the illustrious Cote-d'Or, a quarter hectare of rocky soils was secured on the propitious Adelaide Hills, the aim being to construct a new world Pinot Noir of satin textures, solid palate weight and the softest, chamois tannins. Closely planted and lovingly husbanded, the precious vines yield an extraordinary quality of Pinot Noir. A mix of seasoned and new French oak barriques are employed to mature gracefully without dominating the fruit.

Much of the philosophy at Leabrook centres around creating wines which are excellent as a compliment to good food. The finest Chardonnay are renowned for their innate affinity to cuisine, Leabrook defines the ultimate in styling, immensely food friendly while offering serious palate weight, superior length and remarkable elegance. From the Mawsons Ridge vineyard at Forest Range in the hills above Adelaide, the fruit of low yielding vines is essential, a remarkable wine of impeccable balance, pristine elegance and superior length.

Leabrook are all about crafting restricted yields of hand picked Adelaide Hills fruit through a Burgundian approach to winemaking. Vines were originally establsihed to a quarter hectare hobby block of rocky clay soil in Onkaparinga Valley, closely planted in the traditional French way, the inaugural vintages immediately started to show promise. A historic woollen mill in Lobethal was ideally suited as a wineworks. Textural, elegantly aromatic and exquisitely balanced, the limited release wines of Leabrook may not be easy to find but they are worth the challenge.

The Adelaide Hills Lane Vineyard was established after an exhaustive search to find a property with the perfect aspects and soil to plant vines. John Edwards acquired his affinity for viticulture and honed his skills alongside the most gifted Adelaide Hills winemakers during a tour of duty at Starvedog Lane. The choicest grapes, hand picked off twenty year old vines, grown to the elite Block 14, are minimally crafted into a beautifully perfumed, elegantly structured and singularly articulate wine, which speaks profoundly of single vineyard Adelaide Hills Shiraz.

A Sauvignon Blanc of magnificent pungent passionfruity characters, refreshingly citrus in nature with a subtle herbaceous note. The palate displays intense passionfruit and tropical fruits, persistent mineral flavours which are balanced out by a refreshing acidity. Sauvignon Blanc fruit was sourced from outside the Knappstein vineyard at Lenswood, with the balance sourced from nearby Oakbank, so the wine carries the Adelaide Hills appellation. The hills surrounding Adelaide were planted to some of South Australia's very first vineyards in the 1800s. Most of these have since disappeared, but the cool climate and fertile slopes of the Adelaide Hills now provide the idyllic growing conditions for truly world class Sauvignon Blanc. Fruit is grown on Hewitson's own vineyard between Hahndorf and Mount Barker. A pure varietal wine from grapes grown by David and Annette Innes at Littlehampton. Viticulture was first established in the Adelaide Hills in 1839 by John Barton Hack at a place near Mount Barker, just five kilometres from Littlehampton. It has been recently rediscovered as a winegrowing area. Littlehampton is an ideal site to practice organic viticulture, and responds well to biodynamics for keeping the vines healthy. Pinot Gris has been well received by the soils and climes here, where it ripens to plump varietal flavours and a judiciously crisp acidity.

Grown to the the Henschke Archer's Vineyard at Lenswood in Adelaide Hills, near the heart of the South Mount Lofty Ranges. A refreshing passionfruit, citrus and gooseberry nuanced wine with flinty mineral aromas following up, Coralinga is a highly regional expression of Sauvignon Blanc, delivering ample varietal complexity and true elegance.

An opulent accord of the most superior single vineyard Adelaide Hills Merlot and Cabernet Sauvignon, picked off Stephen and Prue Henschke's exceptional site at Lenswood. This eminently distinguished vineyard was established among the historical homesteads along Coldstore Road by the first settler T N Mitchell in the late 1800s, these prestigious parcels are known to locals as Abbotts Flat. Its perfume of pudding fruits, punnett of ripening cherries, boysenberry and mossy forest floor, sheathed behind a veil of oaken vanilla cedar and freshly milled spice.

A voluminous, golden oaked Chardonnay from a precious block of superior vines, treated to the luxury of a year's maturation in a rich proportion of new French barriques. A beautiful bouquet like an Adelaide Hills spring in full bloom, the peaches, melons and nectarine of early morning market garden, the fragrant saute of leeks in warm butter. Redolent of the succulence and chantilly from good French oak, its serious palate weight and volume of fruit, making a multi dimensional Chardonnay style to match robust white meats, Veau au vin blanc and crispy crackling pork.

Thomas Hardy left Devon at the age of twenty and immigrated to the colony of South Australia, where he established a winery on the banks of Adelaide's River Torrens in 1853. The Tintara wineworks in neighbouring McLaren Vale have since become the home of Hardy Wines, but Adelaide Hills have never been far off the estate's radar. The quality of Sauvignon Blanc here is world class, recognised internationally. Since it's inaugural release in 1993, Grosset has made a powerful statement about the potential of Piccadilly Valley, an Adelaide Hills subregion that's so cool, it is often considered marginal for wine. It's an area that takes time to understand but the wines can be exquisite. Piccadilly is deliberately restrained. Succulent white peach, melon and grapefruit characters create a mineral, focused wine that's fresh and refined.

The Adelaide Hills make marvelous Pinot Gris and Grant Burge retain the finest.
